ENTRÉE RECIPES
Luau Ginger Chicken
- 1 HMR Savory Chicken Entrée
- 2 cups frozen stir fry vegetables
- ½ cup pineapple chunks
- ½ teaspoon ground ginger
- 1 tablespoon light soy sauce
Directions:
- Heat vegetables according to package directions.
- Open entrée and cut chicken into small pieces. Place in medium-sized bowl. Add remaining ingredients. Combine with vegetables.
- Heat thoroughly.

Mexican Layered Salad
- 1 HMR Turkey Chili with Beans Entrée
- 1 cup bell pepper strips, fresh or frozen
- ¼ cup salsa
- ¼ cup low-fat sour cream
- 2 cups chopped lettuce
- ½ cup chopped tomatoes
- 1 small can roasted green chilies, chopped
Directions:
- Cook bell pepper strips until soft.
- Mix together the entrée with the peppers and heat if desired.
- In a separate bowl, mix the salsa and sour cream.
- Layer the ingredients in the following order: lettuce, entrée, salsa and sour cream mixture, tomatoes.
- Sprinkle with green chilies.

Creole Stuffed Pepper
- 1 HMR Chicken Creole Entrée
- 1 whole red, yellow, or green bell pepper
- 2 cups fresh spinach
- ½ cup canned, diced tomatoes
- 1 teaspoon minced garlic
Directions:
- Cup the top off the pepper and remove core and seeds.
- Sauté spinach and garlic in nonstick cooking spray for 3-5 minutes until spinach is wilted.
- Combine entrée, spinach and diced tomatoes.
- Fill the pepper with mixture.
- Bake at 400 degrees for 15 minutes.
- For a softer pepper, steam first for 5 minutes.

SHAKES, PARFAITS, AND PUDDINGS
 Chocolate or Vanilla Fruit Parfait
- 2 packets HMR 70 Plus Chocolate or Vanilla Shake packet
- 4 oz. cold water
- ½ cup sliced banana
- ½ cup sliced strawberries
Directions:
- Empty packets of 70 Plus into a small bowl.
- Add cold water.
- Mix with a spoon until smooth.
- Layer sliced fruit and pudding in a large upright glass.
- Chill to thicken further if desired.

Pistachio Pudding
- 1 packet 70 Plus Vanilla Shake packet
- 2 oz. cold water
- 4 teaspoons sugar-free pistachio instant pudding mix
Directions:
- Empty packets of 70 Plus into a small bowl.
- Add cold water.
- Sprinkle in pistachio instant pudding mix.
- Mix with a spoon until smooth.

Mocha Blast
- 5 oz. brewed coffee, cooled
- 1 packet HMR 800 Chocolate shake packet
- 1 HMR Peanut Butter BeneFit Bar, cut into 6 pieces
- 4 ice cubes
Directions:
- Pour liquid into a blender. Begin mixing on lowest speed.
- Add cut up pieces of BeneFit Bar, one at a time. Blend for 30 seconds after each piece.
- Continue mixing on lowest speed until smooth.
- Add HMR shake packet.
- Add ice cubes one at a time. Mix until thoroughly blended.
